For those that don’t know…What is a Braiser?
The term ‘braising’ means to steam so a braising pan is effectively designed to steam. They are usually used to cook meat. A braiser is designed to be used on both a stovetop and an oven.
Meat is seared at high temperatures to caramelize the surface and add a savory taste to the meat. Once done, a small amount of liquid is added to the pan. The lid is attached and the pan is moved to the oven.
The design of the Braiser means that steam is created but cannot escape. It therefore steams the meat and cooks it. This is different to the Dutch oven, where these are used to stew the meat in liquids.
